Miss Clara — a conscious and contemporary Christmas feast in four servings
“I love the traditional Christmas table but we want to minimize the waste that is hard to avoid with buffets”, says Daniel Guest, Head Chef at Miss Clara. “Our solution is a four course meal of handpicked delicacies from the traditional Christmas table, prepared with our own contemporary attitude, that we serve to our guests at the table.”
Miss Clara also offers an all-vegetarian Christmas lunch/dinner alternative with playful and creative interpretations of non-veg classics, such as veg meatballs from ricotta and chestnut flower, and false eggs with cashews.
“I think that the traditional Christmas table will prevail pretty much as it is for the foreseeable future”, Guest says. “Using some fantasy and creativity, however, we can create vegetarian alternatives at least as good and `christmasy´ as the originals. Our vegan curry herring made from aubergine, for example, is very popular among dedicated meat and fish lovers.”
